WATER ACTIVITY ANALYZERS

A water activity (aw) analyser measures the equilibrium relative humidity of a product, which is derived from the partial vapour pressure of water on its surface. The water activity depends on factors such as the product's composition, temperature, and water content. This measurement is linked to the product's quality attributes: flavour, colour, texture, nutritional value and shelf life. By measuring the water activity, manufacturing processes and the conservation of foods, cosmetics, pharmaceuticals, etc., can be monitored and optimised, while also guaranteeing the product's mechanical, physical, chemical and microbiological stability, and consumer safety.
